CB Cupcake Review

Last weekend a bunch of friends and I celebrated the birthday of someone who is very important to all of us… THIS GUY:

Anyways you can’t have a birthday without cake, and unfortunately, that guy up there isn’t a huge fan of sweets.  I ran across a recipe earlier in the year from Smitten Kitchen entitled “Chocolate, Whiskey, and Beer Cupcakes,” and knew that those would do the trick.  You see the, “Irish Car Bomb,” (which is a large shot of Irish whiskey & Bailey’s dropped into a full glass of Guinness and then CHUGGED), is actually one of his favorite drinks!  I had to find a way to make this work.

So I enlisted the help of one of my good friends, THIS GIRL:

THIS GIRL happens to be as addicted to baking as I am, but has the most FANTASTIC kitchen to bake in.  So gave her a ring and we devised a plan.  After taking stock of the ingredients and tools in both of our kitchens, we headed to Safeway to pick up the remaining ingredients.  You can check out the recipe here, but its fairly easy to make.

The cake was baked with love and Guinness, the filling was a scrumptious dark chocolate ganache that was laced with Irish Whiskey, and the buttercream frosting used Baileys instead of your traditional Madagascar Bourbon Vanilla as flavoring.  The only problem that we ran into was when we were making the buttercream.  The existing recipe was just too sweet, and I knew that the B-Day guy wouldn’t stand for that, so we cut the sweetness with some cream cheese & lemon juice.  I don’t know how much of each ingredient was used, but you can figure it out.  Not too hard.  :)  OH – one other piece of advice… once the butter is soft enough, switch from the paddle attachment to the wire whisk in order to aerate the frosting.  My frazzled mind totally forgot until the end.
